If there is such a person as a nut-aholic, that's me! I love nuts and they're nutritious, too. In the past, glazed nuts have always been special occasion treats, bought in small jars or cellophane bags and doled out sparingly. No more!
The Back to Basics Nut Roaster easily glazes all my favorites - almonds, pecans, walnuts, cashews in a quick ten minutes on top of the stove. The roaster itself looks a bit like a deep fry pan with a mixing handle in the center. All I do is put the roaster on our electric cook top over medium high and then add nuts, glaze mixture (more about that later) and specified amount of water to pan. Then, simply rotate the mixing handle until the moisture is gone. I pour the nuts onto a non-stick cookie sheet to cool. If any stick together they're easily separated with a wooden spoon while they're hot.
Now for the promised glaze info: We really like the Back To Basics Toffee and Cinnamon glazes. For either of these we use 2 cups nuts, 3/4 Cup of glaze and 3 Tablespoons of water. Delish!
This past holiday season we gave neighbors and friends jars of glazed nuts for which we received thanks and compliments galore. We also try to keep some on hand in an air tight container for drop-in guests but, to be honest, more often then not they're for us.
